Carrot Muffins - this recipes for juicer pulp makes 12 muffins

31/2 cups carrot pulp

1 cup pineapple pulp

3 cups whole-grain flour

1 cup Canola oil

1 cup honey

6 egg whites

1 tbsp vanilla

1 tbsp baking soda

2 tsp cinnamon

1 tsp nutmeg

1 cup crushed nuts

Preheat oven to 350 degrees. Mix pulp from carrot and vanilla, and pineapple. Add egg whites, honey,and oil. Sift together flour, baking soda, cinnamon, nutmeg together and add gradually to other ingredients, stirring until blended. Stir in nuts.

Fill muffin papers 2/3 full, leaving room for expansion. Bake for 45 minutes.

Tuna Surprise (surprise – there is no tuna in this recipes for juicer pulp)

1 pound carrots

Juice carrots and use pulp for this recipe

1Tbs lemon juice

2 Tbs soy sauce

1 tsp kelp powder

¾ cup water

1 cup carrot pulp

2/3 cup vegetable oil

2/3 cup honey

1 egg

2 cups whole wheat flour

Add water to carrot pulp and cook over low heat for 10 minutes, stirring often so the pulp does not scorch. Add the honey and oil in a bowl then beat in the egg. Stir in the cooked pulp, the flour and baking powder. Add vanilla. Stir and spoon by spoonfuls onto greased cookie sheet. Bake 12 to 15 minutes.
